Ingredients For potato~bacon chowder

  • 1 large box
    chicken broth, plus more for mixing and cooking
  • 5
    potatoes, washed, skin on
  • 1 cup
    or more of cream or milk
  • Lots
    of butter
  • 5 slice
    bacon, crisply cooked
  • salt and pepper to taste
  • cheddar cheese

How To Make potato~bacon chowder

  • 1
    Chop potatoes into large cubes; cook until tender, in enough chicken broth to cover. About 15 mins or so
  • 2
    Remove half of chicken broth and potatoes and blend together until lightly smooth. Add back to rest of potatoes and broth in pot.

    Stir in rest of ingredients. Let simmer slowly, stirring often to prevent scorching. Simmer just to let bacon flavor come out. If too thick, add more broth, or some sour cream
  • 4
    Serve immediately, and top with cheese and some extra bacon
