This recipe came from "The Best & Easy Recipes of New England (Keepsake Cuisine Series) Seeing that my husband farms Oysters down Cape Cod, MA. I should at least post one recipe for Oyster stew !!!! Oysters are sure a hit in this area!

Ingredients
- 3 - dozen oysters with liquid
- 2 tablespoons butter
- 1 tablespoon flour
- 2 tablespoons chopped green onions
- 2 cups half and half (milk/cream)
- 1 teaspoon butter
- 1/4 teaspoon salt
- 1 dash hot hot pepper sauce
- CHEESE PUFFS
- 1 cup grated chedder cheese
- 1 cup chopped onion
- 1 cup mayonnaise
- - bread, cut into rounds
How To Make oyster stew

Step 1Heat oysters in liquid until their edges curl, then set aside to keep warm.

Step 2Melt butter in a saucepan, blend in flour until smooth, stir in chopped green onions and simmer a few minutes. Pour into a blender with oyster liquid and one dozen of the oysters. Blend first on low, then high for about a minute. While blending, add cream (at room temperature). Melt one teaspoon of butter in a double boiler, add oyster mixture and stir until well heated and thickened.

Step 3Season to taste. Add remaining oysters, or place six oysters in each warmed soup bowl and pour stew over them. Garnish with paprika. Serves 4.

Step 4CHEESE PUFFS

Step 5Mix ingredients together and spread on bread rounds. Bake in 350 degree oven until tops are bubbly and lightly browned, about 15 minutes. Serves 6-8
