This chowder recipe is modified from Betty Crocker's Slow Cooker Chicken Stew.

Ingredients

  • 3 medium potatoes, cut in 1 1/2" cubes
  • 12 ounces sliced mushrooms
  • 16 ounces carrots, sliced
  • 1 package dry onion soup mix
  • 3 pounds chicken thighs, skinless and boneless
  • 1 teaspoon garlic powder
  • 1 tablespoon tomato paste
  • 1 jar chicken gravy
  • 1 1/2 cups dry white wine or chicken stock
  • 1/2 cup diced onion

How To Make mushroom chicken chowder

  • Step 1
    Layer potatoes, carrots, onions and mushrooms in a large 5-6 qt crock pot. Sprinkle dry onion soup mix over vegetables.
  • Step 2
    Arrange chicken on vegetable mixture and sprinkle garlic powder over chicken.
  • Layer all ingredients in order in crock pot.
    Step 3
    Combine chicken gravy and tomato paste and spread over chicken. Pour wine/chicken stock into crock pot.
  • Step 4
    Cook on LO 8-10 hrs. Remove chicken and cut into bite-sized pieces. Return to crock pot until warmed.
