mom's easy potato-corn chowder

I loved when my mom made this for those chilly nights! Sometimes she would top each bowl off w/ some crumbled bacon, YUM!!

Ingredients

  • 1 cup onion, chopped
  • 2 teaspoons minced garlic
  • 1 tablespoon butter
  • 2 cups diced potatoes
  • 1 cup red bell pepper, chopped
  • 2 cups reduced-sodium chicken broth
  • 1/4 teaspoon pepper
  • 1/4 teaspoon marjoram
  • 1 - bay leaf
  • dash - nutmeg
  • 1 - 16-1/2 oz can cream-style corn
  • 1 - 7 oz can whole kernel corn
  • 1 - 12 oz can evaporated milk, i used fat-free
  • - paprika, for garnish

How To Make mom's easy potato-corn chowder

  • Step 1
    In lg saucepan, cook onion, garlic and butter over medium heat for 5 mins, stirring often. Add potatoes, red bell pepper, broth, pepper, marjoram, bay leaf, and nutmeg. Bring to a boil.
  • Step 2
    Reduce heat to low and simmer 20 mins, stirring occasionally. Stir in remaining ingredients, except paprika. Bring to a boil.
  • Step 3
    reduce heat to low. Simmer 2-3 mins more. Remove bay leaf. Serve sprinkled w/ paprika.
