italian sausage and gnocchi soup

This is a very good soup and very filling. I was going to buy regular gnocchi until I found the mini ones and they work perfect in this soup. I also used frozen spinach in this because I almost always have it in the freezer .

Ingredients

  • 1 pound italian sausage, mild
  • 1 small yellow onion diced
  • 3 cloves garlic, finely chopped
  • 32 ounces chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 package potato gnocchi (i used the mini delallo brand)
  • 4 cups chopped spinach
  • 1 cup whipping cream

How To Make italian sausage and gnocchi soup

  • Step 1
    In a 5 quart dutch oven, cook the sausage over medium heat until it is no longer pink. Drain. Add onion and garlic and continue to cook until onion is tender--2 to 3 minutes.
  • Step 2
    Add chicken broth, salt and pepper and heat to boiling. Stir in gnocchi and spinach and simmer until gnocchi begins to float...3 to 4 minutes. Stir in cream and serve.
