Ingredients

  • 1 cup chopped onion
  • 1/4 can chopped celery
  • 1/4 cup chopped bell pepper
  • 3 tablespoons chopped parsley
  • 4 tablespoons unsalted butter
  • 2 tablespoons flour
  • 3 cups heavy cream or evaporated skim mik (hot)
  • 1 cup chicken broth (hot)
  • 2 packages frozen chopped spinach (drained)
  • 1 pound lump crabmeat
  • 1 - bay leaf
  • 1 teaspoon Worchestershire sauce
  • dash basil and thyme
  • - salt and pepper

How To Make crab and spinach bisque

  • Step 1
    Melt butter, saute' all ingredients until done.
  • Step 2
    Add flour and blend well.
  • Step 3
    Add cream and simmer for 10 minutes.
  • Step 4
    Place spinach in food processor with chicken broth, puree'.
  • Step 5
    Add pureed mixture to cream. Season to taste.
  • Step 6
    Add crabmeat. Do not boil.
