Crab and Spinach Bisque
Ingredients

1 cchopped onion

1/4 can(s)chopped celery

1/4 cchopped bell pepper

3 Tbspchopped parsley

4 Tbspunsalted butter

2 Tbspflour

3 cheavy cream or evaporated skim mik (hot)

1 cchicken broth (hot)

2 pkgfrozen chopped spinach (drained)

1 lblump crabmeat
-
1bay leaf
-
1 tspWorchestershire sauce

dash(es)basil and thyme

·salt and pepper
How to Make Crab and Spinach Bisque
- Melt butter, saute' all ingredients until done.
- Add flour and blend well.
- Add cream and simmer for 10 minutes.
- Place spinach in food processor with chicken broth, puree'.
- Add pureed mixture to cream. Season to taste.
- Add crabmeat. Do not boil.
