This recipe was Mom's and I tweaked it a little bit..I alway's looked forward to moms fall chowder and stews. Yum!

Ingredients

  • 1 small onion
  • 1/4 of - red pepper or roasted red pepper
  • 3 medium red or white potatoes
  • 1/2 cup butter
  • 2 tablespoons olive oil, extra virgin
  • 1 can creamed corn
  • 1 cup frozen corn
  • - salt & pepper to taste

How To Make corn chowder

  • Step 1
    Add butter & olive oil to 5qt sauce pan melt together over med low heat
  • Step 2
    add onions & red pepper, if using instead of roasted red pepper, saute till tender.If using roasted red pepper add now.Add salt & pepper to taste.
  • Step 3
    Add frozen corn & contnue to cook about 1&1/2 min.add creamed corn stir & add 4 cups of water. add potatoes cook on med. high till tender then add 2-3 cups of milk cook till heated through.
