comfort essentials: leftover ham and potato soup
As I pen these words, it is Christmas Eve, and large flakes of snow are falling out of cold, grey skies. The prayer flags are dancing to the frigid North winds, while the Koi’ are sleeping peacefully under the frozen surface of the ponds What a perfect day for a comfy bowl of soup. I suppose that this does not need to be “leftover” ham; however, during the holiday season we always seem to have things like ham lying about. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- THE HAM & VEGGIES
- 3 tablespoons sweet butter, unsalted
- 2 - 3 medium potatoes, russet variety, diced, peeling optional
- 6 ounces ham, cooked and diced
- 1/4 cup celery diced
- 1/4 cup yellow onion diced
- black pepper, freshly ground, to taste
- salt, kosher variety, to taste
- THE SOUP BASE
- 3 tablespoons flour, all-purpose variety
- 2 cups chicken or turkey stock, not broth
- 1 cup whole milk
- OPTIONAL GARNISH ITEMS
- chopped green onions, just the green parts
- shredded cheese, sharp
- bacon bits
- shredded carrots
- AT THE TABLE
- hot sauce, i prefer franks
- soup crackers
- crusty bread
- salt, pepper
- how about a few beers?
How To Make comfort essentials: leftover ham and potato soup

Step 1PREP/PREPARE

Step 2You will need a good size pot to make this recipe.

Step 3Gather your ingredients (mise en place).

Step 4Add the butter to a pot over medium heat. When the butter melts, add the ham, veggies and a pinch or two of salt and pepper. Stir until the veggies begin to soften, about 8 – 10 minutes.

Step 5While the veggies are cooking away, add the flour, stock, and milk to a bowl or measuring cup, then whisk to combine.

Step 6Add to the pot with the veggies and ham.

Step 7Bring the pot up to a simmer, and stir until the soup thickens, and the potatoes are fork tender, about 4 – 6 minutes.

Step 8While the soup is thickening, add some salt and pepper, to taste.

Step 9PLATE/PRESENT

Step 10Serve while nice and warm with crackers, bread… whatever. Enjoy.
