Ingredients

  • 1 tablespoon butter
  • 3/4 cup onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 3 cups milk
  • 1 cup chicken broth
  • 5/8 teaspoon pepper
  • 1.25 cups instant mashed potato flakes
  • 3 tablespoons blue cheese, crumbled
  • 1/3 cup cheddar cheese, grated

How To Make cheese potato chowder

  • Step 1
    In medium saucepan, melt butter.
  • Step 2
    Add onion and green pepper.
  • Step 3
    Cook and stir until softened, about 5 minutes.
  • Step 4
    Stir in milk, chicken broth and black pepper.
  • Step 5
    Bring to a boil.
  • Step 6
    Stir in potato flakes.
  • Step 7
    Cook and stir until thickened, about 1 minute.
  • Step 8
    Set aside 1 tablespoon each cheddar and blue cheese for later use.
  • Step 9
    Stir in remaining cheddar and blue cheeses.
  • Step 10
    Heat until melted, about 1 minute.
  • Step 11
    Just before serving, sprinkle with reserved cheddar and blue cheeses.
