bratten's clam chowder
This recipe (supposedly) came from Bratten's Seafood Grotto, a very popular (however, now defunct) seafood restaurant in Salt Lake City, Utah. It is very creamy, rich and full-flavored.

Ingredients
- 1 cup finely chopped onion
- 1 cup finely diced celery
- 2 cups finely chopped potatoes
- 2 cans (6 1/2 oz. each) minced clams
- 3/4 cup butter
- 3/4 cup all-purpose flour
- 1 quart half-and-half
- 1 1/2 teaspoons salt
- 1 pinch black pepper
- 1 tablespoon red wine vinegar
How To Make bratten's clam chowder

Step 1Drain clams. Place vegetables in small pan and pour clams over. Add water to barely cover; simmer, covered, until tender.

Step 2Meanwhile, melt butter; add flour and blend. Cook a few minutes, stirring constantly. Add cream and continue to cook, stirring constantly, till smooth and thick.

Step 3Add vegetables and liquid; add seasonings and vineger and heat through.
