Ingredients

  • 3 pounds red potatoes
  • 1/4 cup butter
  • 1/4 cup flour
  • 8 cups half-and-half
  • 16 ounces soft processed cheese
  • - white pepper to taste
  • - garlic powder to taste
  • 1 teaspoon hot pepper sauce
  • 1/2 pound cooked bacon
  • 1 cup cheddar cheese, shredded

How To Make baked potato soup

  • Step 1
    Dice unpeeled red potatoes into 1/2 inch cubes. Place in pan cover with water and boil 10-15 minutes. Until about 3/4 cooked.
  • Step 2
    In a dutch oven, melt butter and flour mixing until smooth.
  • Step 3
    Place over low heat and gradually add half-and-half, stirring constantly. Continue to cook until liquid begins to thicken.
  • Step 4
    Add melted cheese and stir.
  • Step 5
    Drain potatoes and add to cheese mixture. Stir in pepper, garlic powder and hot pepper sauce. Cook over low heat for 30 minutes. Watch closely and stir.
  • Step 6
    Place in a bowl and garnish with bacon and cheese.
