I was trying to come up with something to use all the zucchini in our garden and came up with this recipe. We love it really spicy.

1 lb
ground lamb
1/2 large
onion, chopped
red peppers (can use jalapeno for added heat)
1 Tbsp
powdered garlic
fresh ground pepper to taste
1 c
fresh basil leaves
2 c
cooked rice
1/2 c
chicken boullion
zucchini - peeled and chopped
1/2-1 c
mozzarella cheese
1 large
tomato seeded and chopped

How to Make Zucchili Lamb Casserole


  • 1cook onion, groung lamb, chopped peppers in frying pan with a little olive oil until onions are translucent and lamb is just barely done.
  • 2In oven proof pan mix all remaining ingredients along with lamb mixture. Top with mozzarella cover with either a lid or aluminum foil and bake in 350 degree oven for 1 hour or until cheese is melted.
  • 3The spices can be adjusted to suit your tastes. I have even added curry to this dish with great success.
