zucchili lamb casserole

I was trying to come up with something to use all the zucchini in our garden and came up with this recipe. We love it really spicy.

Ingredients

  • 1 pound ground lamb
  • 1/2 large onion, chopped
  • 1-2 - red peppers (can use jalapeno for added heat)
  • 1 tablespoon powdered garlic
  • - fresh ground pepper to taste
  • 1 cup fresh basil leaves
  • 2 cups cooked rice
  • 1/2 cup chicken boullion
  • - salt
  • 1-2 - zucchini - peeled and chopped
  • 1/2-1 cup mozzarella cheese
  • 1 large tomato seeded and chopped

How To Make zucchili lamb casserole

  • Step 1
    cook onion, groung lamb, chopped peppers in frying pan with a little olive oil until onions are translucent and lamb is just barely done.
  • Step 2
    In oven proof pan mix all remaining ingredients along with lamb mixture. Top with mozzarella cover with either a lid or aluminum foil and bake in 350 degree oven for 1 hour or until cheese is melted.
  • Step 3
    The spices can be adjusted to suit your tastes. I have even added curry to this dish with great success.
