I was trying to come up with something to use all the zucchini in our garden and came up with this recipe. We love it really spicy.

  • 1 lb
    ground lamb
  • 1/2 large
    onion, chopped
  • 1-2
    red peppers (can use jalapeno for added heat)
  • 1 Tbsp
    powdered garlic
  • ·
    fresh ground pepper to taste
  • 1 c
    fresh basil leaves
  • 2 c
    cooked rice
  • 1/2 c
    chicken boullion
  • ·
  • 1-2
    zucchini - peeled and chopped
  • 1/2-1 c
    mozzarella cheese
  • 1 large
    tomato seeded and chopped

How to Make Zucchili Lamb Casserole


  1. cook onion, groung lamb, chopped peppers in frying pan with a little olive oil until onions are translucent and lamb is just barely done.
  2. In oven proof pan mix all remaining ingredients along with lamb mixture. Top with mozzarella cover with either a lid or aluminum foil and bake in 350 degree oven for 1 hour or until cheese is melted.
  3. The spices can be adjusted to suit your tastes. I have even added curry to this dish with great success.
