white chili (reduced fat)
I tried an excellent recipe from another site. I borrowed it as a basis for this slightly different, lower fat but just as flavorful version! (Thanks LL for the inspiration!)

Ingredients
- 1 pound 93% fat ground turkey
- 1 medium onion, chopped
- 1 teaspoon garlic, minced
- 1/2 cup celery, diced
- 2 cans (14 ounce) cannelloni beans, rinsed and drained
- 1 cup frozen corn
- 1 can (4 ounce) green chilis, mild, medium or hot
- 2 cups chicken stock
- 1 teaspoon salt
- 1 1/2 teaspoons cumin
- 1 teaspoon dried oregano
- 1/4 teaspoon new mexican green chili powder or cayenne pepper (more to taste)
- 1/4 teaspoon black pepper
- 1 can fat-free evaporated milk (12 oz)
- 1/2 cup fat free plain greek yogurt
- GARNISHES
- - shredded mexican blend cheese
- - sliced black olives,
- - chopped cilantro leaves
- - crushed tortilla chips
How To Make white chili (reduced fat)

Step 1In a large pot, break up ground turkey and stir over medium-high heat until no more pink shows. Add chopped onion, celery and garlic. Heat until onion starts to turn translucent.

Step 2Add broth, corn and beans, then seasonings. Bring to boil, then cover and simmer for about 1/2 hour to give flavors a chance to blend.

Step 3Slowly pour in evaporated milk and add yogurt. Keep over low heat until warmed through. Adjust seasonings.

Step 4Serve with desired garnishes.
