white chili (reduced fat)

I tried an excellent recipe from another site. I borrowed it as a basis for this slightly different, lower fat but just as flavorful version! (Thanks LL for the inspiration!)

Ingredients

  • 1 pound 93% fat ground turkey
  • 1 medium onion, chopped
  • 1 teaspoon garlic, minced
  • 1/2 cup celery, diced
  • 2 cans (14 ounce) cannelloni beans, rinsed and drained
  • 1 cup frozen corn
  • 1 can (4 ounce) green chilis, mild, medium or hot
  • 2 cups chicken stock
  • 1 teaspoon salt
  • 1 1/2 teaspoons cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon new mexican green chili powder or cayenne pepper (more to taste)
  • 1/4 teaspoon black pepper
  • 1 can fat-free evaporated milk (12 oz)
  • 1/2 cup fat free plain greek yogurt
  • GARNISHES
  • - shredded mexican blend cheese
  • - sliced black olives,
  • - chopped cilantro leaves
  • - crushed tortilla chips

How To Make white chili (reduced fat)

  • Step 1
    In a large pot, break up ground turkey and stir over medium-high heat until no more pink shows. Add chopped onion, celery and garlic. Heat until onion starts to turn translucent.
  • Step 2
    Add broth, corn and beans, then seasonings. Bring to boil, then cover and simmer for about 1/2 hour to give flavors a chance to blend.
  • Step 3
    Slowly pour in evaporated milk and add yogurt. Keep over low heat until warmed through. Adjust seasonings.
  • Step 4
    Serve with desired garnishes.
