white chicken chili

I threw this together yesterday for a "soup sale" day at work. It was a hit and I brought home an empty crockpot! This is not very spicy, but you could spice it up with hot Rotel and some red pepper.

Ingredients

  • 3 large chicken breast halves, skinless and boneless
  • 1/4 can olive oil
  • 1/2 large onion, coursely chopped
  • 2 tablespoons finely chopped fresh garlic
  • 38 ounces chicken broth
  • 3 cans great northern beans, not drained
  • 2 cans white niblets corn
  • 1 can rotel tomatoes not drained
  • 1 1/2 tablespoons cumin
  • 1 tablespoon chili powder

How To Make white chicken chili

  • Step 1
    Boil chicken breasts in large pan of salted water or until no longer pink. Drain, and shred into bite size chunks.
  • Step 2
    Saute garlic and onion in oil until translucent.
  • Step 3
    Add the rest of the ingredients and simmer for about an hour.
  • Step 4
    This could also be made in a slow cooker (6 hours or so on low).
