I threw this together yesterday for a "soup sale" day at work. It was a hit and I brought home an empty crockpot! This is not very spicy, but you could spice it up with hot Rotel and some red pepper.

  • 3 large
    chicken breast halves, skinless and boneless
  • 1/4 can(s)
    olive oil
  • 1/2 large
    onion, coursely chopped
  • 2 Tbsp
    finely chopped fresh garlic
  • 38 oz
    chicken broth
  • 3 can(s)
    great northern beans, not drained
  • 2 can(s)
    white niblets corn
  • 1 can(s)
    rotel tomatoes not drained
  • 1 1/2 Tbsp
  • 1 Tbsp
    chili powder

How to Make White Chicken Chili


  1. Boil chicken breasts in large pan of salted water or until no longer pink. Drain, and shred into bite size chunks.
  2. Saute garlic and onion in oil until translucent.
  3. Add the rest of the ingredients and simmer for about an hour.
  4. This could also be made in a slow cooker (6 hours or so on low).
