White Chicken Chili
3 largechicken breast halves, skinless and boneless
1/4 can(s)olive oil
1/2 largeonion, coursely chopped
2 Tbspfinely chopped fresh garlic
38 ozchicken broth
3 can(s)great northern beans, not drained
2 can(s)white niblets corn
1 can(s)rotel tomatoes not drained
1 1/2 Tbspcumin
1 Tbspchili powder
How to Make White Chicken Chili
- Boil chicken breasts in large pan of salted water or until no longer pink. Drain, and shred into bite size chunks.
- Saute garlic and onion in oil until translucent.
- Add the rest of the ingredients and simmer for about an hour.
- This could also be made in a slow cooker (6 hours or so on low).
