white chicken chili

I threw this together yesterday for a "soup sale" day at work. It was a hit and I brought home an empty crockpot! This is not very spicy, but you could spice it up with hot Rotel and some red pepper.

Ingredients
- 3 large chicken breast halves, skinless and boneless
- 1/4 can olive oil
- 1/2 large onion, coursely chopped
- 2 tablespoons finely chopped fresh garlic
- 38 ounces chicken broth
- 3 cans great northern beans, not drained
- 2 cans white niblets corn
- 1 can rotel tomatoes not drained
- 1 1/2 tablespoons cumin
- 1 tablespoon chili powder
How To Make white chicken chili

Step 1Boil chicken breasts in large pan of salted water or until no longer pink. Drain, and shred into bite size chunks.

Step 2Saute garlic and onion in oil until translucent.

Step 3Add the rest of the ingredients and simmer for about an hour.

Step 4This could also be made in a slow cooker (6 hours or so on low).
