I threw this together yesterday for a "soup sale" day at work. It was a hit and I brought home an empty crockpot! This is not very spicy, but you could spice it up with hot Rotel and some red pepper.

chicken breast halves, skinless and boneless
1/4 can(s)
olive oil
1/2 large
onion, coursely chopped
2 Tbsp
finely chopped fresh garlic
38 oz
chicken broth
3 can(s)
great northern beans, not drained
2 can(s)
white niblets corn
1 can(s)
rotel tomatoes not drained
1 1/2 Tbsp
1 Tbsp
chili powder

How to Make White Chicken Chili


  • 1Boil chicken breasts in large pan of salted water or until no longer pink. Drain, and shred into bite size chunks.
  • 2Saute garlic and onion in oil until translucent.
  • 3Add the rest of the ingredients and simmer for about an hour.
  • 4This could also be made in a slow cooker (6 hours or so on low).
