We visited Hatch, NM and found that many dishes there include their famous Hatch chilies. This version of White Chili includes a can of those same kind of chilies - you can use mild, medium or hot - up to you!

Ingredients For white chicken chili

  • 1 lb
    ground chicken
  • 2 can
    white cannelloni beans, 14 oz - drained and rinsed
  • 1 can
    chopped green chilies (about 4 oz)
  • 1 Tbsp
    dried minced onion
  • 1 tsp
    minced garlic
  • 2 tsp
    cumin
  • 1 tsp
    adobo seasoning
  • 1 can
    diced tomatoes (14 oz)
  • 1/2 c
    plain fat-free yogurt or lite sour cream
  • salt and pepper to taste
  • 1 c
    water
  • avocado, diced
  • cilantro
  • shredded cheese (mexican blend, pepper jack or other)
  • tortilla chips

How To Make white chicken chili

  • 1
    Break up chicken as you cook it over medium high heat until pink is no longer showing. Add onions, garlic, water, beans, chilies, tomatoes and seasoning.

    Bring to boil and simmer for 15 minutes to an hour. (Add water as needed!)

    Stir in yogurt or sour cream until warm. Serve with cilantro, avocado, tortilla chips and cheese.
