Ingredients
- 1 tablespoon olive oil, extra virgin
- 2 - chicken breasts, diced
- 2 small white onions, diced
- 2 small carrots, sliced
- 2 - stalks celery, diced
- 4 cloves fresh garlic, minced
- 2 cans great northern beans, 16 oz.
- 4 cups chicken broth
- 2 cans 4 oz., mild chopped green chilies
- 2 teaspoons ground cumin
- 1 1/2 teaspoons dried oregano (or 1 tablespoon fresh chopped)
- 1/4 teaspoon ground cloves
- 1/4 teaspoon cayenne pepper (add at end to taste)
- 3 cups monterey jack cheese, shredded
- - cilantro, fresh
- - sour cream
How To Make white chicken chili

Step 1Heat olive oil in dutch oven and saute garlic until lightly browned. Add diced chicken, onion, carrots and celery and saute until chicken is done and veggies soften. Add beans, undrained, chicken broth and spices (except cayenne) and simmer for 2 hours.

Step 2Remove from heat. Add 2 cups of the jack cheese and stir until melted, then add cayenne to taste. Serve and top bowls with remaining sprinkle of cheese, a dollop of sour cream and chopped cilantro.
