I love White Chicken Chili and have experimented with other recipes. This is the best recipe I have found.

olive oil, extra virgin
chicken breasts, diced
2 small
white onions, diced
2 small
carrots, sliced
stalks celery, diced
4 clove
fresh garlic, minced
2 can(s)
great northern beans, 16 oz.
4 c
chicken broth
2 can(s)
4 oz., mild chopped green chilies
2 tsp
ground cumin
1 1/2 tsp
dried oregano (or 1 tablespoon fresh chopped)
1/4 tsp
ground cloves
1/4 tsp
cayenne pepper (add at end to taste)
3 c
monterey jack cheese, shredded
cilantro, fresh
sour cream

How to Make White Chicken Chili


  • 1Heat olive oil in dutch oven and saute garlic until lightly browned. Add diced chicken, onion, carrots and celery and saute until chicken is done and veggies soften. Add beans, undrained, chicken broth and spices (except cayenne) and simmer for 2 hours.
  • 2Remove from heat. Add 2 cups of the jack cheese and stir until melted, then add cayenne to taste. Serve and top bowls with remaining sprinkle of cheese, a dollop of sour cream and chopped cilantro.
