white bean chili
My family will request this on cooler days. Easy, quick and ingredients that are usually in the house. The recipe can be kicked up a notch with more cayenne or hot sauce. Either way, great to fix, eat or freeze for later. Enjoy!

Ingredients
- 1 pound dry white beans
- 4 - chicken breasts or 3-4 large cans of chicken
- 1/4 teaspoon minced garlic
- 1 large onion/chopped
- 4 ounces green chilis
- 1 1/2 teaspoons oregano, dried
- 1/4 teaspoon cayenne pepper
- - black pepper to taste
How To Make white bean chili
-
Step 1Wash the beans over a colander. Place the washed beans into a large cooking pot. Boil the beans to a rolling boil for 1 hour. May need to add water to keep covered and extra water for soup.
-
Step 2Drain out the water storing the chicken in the cans. Rinse the chicken in the cans by running water over the chicken in the cans. Crunch up the chicken into the bean pot after the beans have cooked for 1 hour.
-
Step 3Add the remaining ingregidents. Boil for another 30 minutes to incorporate the flavors.
-
Step 4You may use chicken breast as well but will need to boil in large pot until tender to break apart the chicken. Use this chicken stock that boiled the chicken when cooking the beans. Can cook the beans at the same time. May need to add water with chicken bouillon cubes or chicken stock if water gets low while boiling the beans.
