Sometimes I have time to make all this from scratch... Sometimes I don't have a lot of time and I use the semi homemade version and sometimes I am just broke and grocery day is still two days away and I need something hearty that will last two days.

Ingredients For white bean and spud soup

  • 1 jar
    white beans
  • 1 can
    chicken or cooked fresh left over chix 1-2 cups
  • 1 Tbsp
    dill, dried or fresh
  • 1 bag
    bear creek potatoe soup
  • 1 tsp
    salt and pepper
  • 2 Tbsp
    butter
  • 1 c
    water

How To Make white bean and spud soup

    Make Bear creek soup as directed on package.

    Everything from here is up to your best judgment. I usually use a chicken left over from dinner. So I pick it clean bite size pieces. Toss some butter on top of it and then add it to the jar of beans I purchased. Sometime I feel like the large jar sometimes the small jar. I let this simmer on the stove while the Bear Creek cooks.

    After the soup is finished I add the beans and chicken. And then spice it with dill and s&p to taste. I sometimes need to add more or less water. Depends on my mood do I want it thick and creamy or a bit more runny...
