Love Chili, but sometimes I need some variety. After perusing several recipes, I decided to wing it and came up with a bean filled Taco Soup that is easy to prepare and even easier to eat.

  • 2 lb
    beef, turkey, or chicken - ground
  • 1 large
    onion, diced
  • 1 pkg
    taco seasoning mix
  • 1 pkg
    ranch dressing mix
  • 2 c
  • 1 can(s)
    tomatoes, diced w/juice (28 oz.)
  • 1 can(s)
    green chilies, diced
  • 1 can(s)
    chili beans w/juice
  • 1 can(s)
    black beans, drained
  • 1 can(s)
    kidney beans, drained (light or dark)
  • 1 can(s)
    pinto beans, drained or pink beans, drained
  • 1 can(s)
    white hominy, drained
  • ·
    cheddar cheese, shredded - optional
  • ·
    sour cream - optional
  • ·
    guacamole - optional

How to Make Weekday Taco Soup


  1. Place meat and onions in large pot and brown burger. Drain grease. Stir in taco seasoning, ranch seasoning and water. Simmer for approx. 15 minutes.
  2. Add chilies, chili beans w/juice, all the drained beans and hominy and stir thoroughly. Simmer approx. 20 minutes stirring occasionally.
  3. Serve with toppings such as shredded cheddar cheese, sour cream, and/or guacamole.
