The first time that I heard about Venison Chili, I snarled my nose.... now, I like it better than beef chili. I use beef bullion cubes to tame some of the game taste especially when I am serving to others who have never tried it.

Ingredients

  • 4 pounds venison, cubed
  • 3 tablespoons bacon grease
  • 5 tablespoons fresh ground cumin
  • 1/2 teaspoon cayenne pepper
  • 4 - onions, chopped
  • 2 - jalapenos, seeded, chopped
  • 3 tablespoons soy sauce
  • 8 ounces can tomato sauce
  • 2 cups stewed tomatoes
  • 2 tablespoons masa harina
  • 2 - beef bullion cubes

How To Make venison chili

  • Step 1
    Brown meat in bacon grease.
  • Step 2
    Saute the onions, chopped jalapenos and the bell peppers in the bacon grease until the onions start to become transparent.
  • Step 3
    Add the meat, seasonings, except for 1 tablespoon of cumin and the onions/peppers to the pot.
  • Step 4
    Allow to boil for 5-7 minutes.
  • Step 5
    Reduce the heat to medium then add the bullion cubes, tomatoes and tomato sauce.
  • Step 6
    Stir occasionally while continuing to cook for 30 minutes.
  • Step 7
    Reduce heat to simmer and cook for 1 hour.
