The first time that I heard about Venison Chili, I snarled my nose.... now, I like it better than beef chili. I use beef bullion cubes to tame some of the game taste especially when I am serving to others who have never tried it.

4 lb
venison, cubed
3 Tbsp
bacon grease
5 Tbsp
fresh ground cumin
1/2 tsp
cayenne pepper
onions, chopped
jalapenos, seeded, chopped
3 Tbsp
soy sauce
8 oz
can tomato sauce
2 c
stewed tomatoes
2 Tbsp
masa harina
beef bullion cubes

How to Make Venison Chili


  • 1Brown meat in bacon grease.
  • 2Saute the onions, chopped jalapenos and the bell peppers in the bacon grease until the onions start to become transparent.
  • 3Add the meat, seasonings, except for 1 tablespoon of cumin and the onions/peppers to the pot.
  • 4Allow to boil for 5-7 minutes.
  • 5Reduce the heat to medium then add the bullion cubes, tomatoes and tomato sauce.
  • 6Stir occasionally while continuing to cook for 30 minutes.
  • 7Reduce heat to simmer and cook for 1 hour.
