The first time that I heard about Venison Chili, I snarled my nose.... now, I like it better than beef chili. I use beef bullion cubes to tame some of the game taste especially when I am serving to others who have never tried it.

Ingredients
- 4 pounds venison, cubed
- 3 tablespoons bacon grease
- 5 tablespoons fresh ground cumin
- 1/2 teaspoon cayenne pepper
- 4 - onions, chopped
- 2 - jalapenos, seeded, chopped
- 3 tablespoons soy sauce
- 8 ounces can tomato sauce
- 2 cups stewed tomatoes
- 2 tablespoons masa harina
- 2 - beef bullion cubes
How To Make venison chili

Step 1Brown meat in bacon grease.

Step 2Saute the onions, chopped jalapenos and the bell peppers in the bacon grease until the onions start to become transparent.

Step 3Add the meat, seasonings, except for 1 tablespoon of cumin and the onions/peppers to the pot.

Step 4Allow to boil for 5-7 minutes.

Step 5Reduce the heat to medium then add the bullion cubes, tomatoes and tomato sauce.

Step 6Stir occasionally while continuing to cook for 30 minutes.

Step 7Reduce heat to simmer and cook for 1 hour.
