tracy's chili recipe
(1 RATING)
Hunts tomatoes really make the difference in this chili..I've tried them all so don't bother, just buy HUNTS. This is great served with chezits, doritos, saltines, oyster crackers, cornbread crackers etc. Offer shred cheese, freshly diced onions.

How To Make tracy's chili recipe
-
Step 1Brown ground meat with garlic on Medium-High heat. About half-way thru, add chopped vegies and salt. Finish browning the meat.
-
Step 2Reduce Heat to medium. Add sugar, cumin, chili pwdr & mix well Add 1 can petite diced tomatoes & stir it up real well. You could actually divide into containers and freeze at this point for use later as "Chili Starter"
-
Step 3Add 1 can crushed tomatoes. Your meat mixture should look like a thick meat gravy about now...this is your chili base. Using your empty crushed tomato can, + half to 3/4 can of water. Reduce heat to a slow, low simmer.. stir occasionally till you are happy with it. --or-- Put mixture into crock pot...(2 hrs on high or 4 hrs on low.)
-
Step 4Add canned beans (2 kidney+2 chili) and final can of petite diced tomatoes. Stir and Heat through...this is where you will add additional crushed tomatoes if necessary to reach a consistency you are happy with. Next, you just want to heat it through..just put your pan or crockpot on Low while you make some cornbread. You chili will be ready when the corn bread is done.
-
Step 5I like to serve it with doritos...most folks like the cornbread. Other options: chopped onion, sour cream, shredded cheese.
