I planned to make my regular chili, to mix with leftover Macc & Cheese. Went to the pantry, only to see that I was out of tomato sauce & paste. But I had the whole tomatoes & Rotel. I thought, ok. In the crockpot all day, this might just work. I usually don't use Rotel in my chili, but I wasn't thinking about it when I was adding all my usual spices. Then I thought Uh-Oh, might be a tad too spicy, so I added the tablespoon of brown sugar. Gave it a very subtle sweet taste ahead of the heat.

Slow Cooker Crock Pot



  • 1 lb
    ground chuck
  • 1 medium
    onion, large diced
  • 1 tsp
    garlic salt
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    white pepper
  • 1 tsp
  • 1 tsp
    mexican chili powder

  • 2 can(s)
    whole skinned plum tomatoes
  • 1 can(s)
    mild,rotel tomatoes
  • 2 can(s)
    dark red kidney beans, undrained
  • 1/2 pkg
    mccormicks mild chili seasoning
  • 1/2 pkg
    mccormicks hot chili seasoning
  • 1 Tbsp
    dark brown sugar

How to Make Throw Together Slow Cooker Chili


  1. Brown the meat with the spices & onion over medium heat.(doesn't have to be cooked through because it will be in the slow cooker for awhile.) Drain fat.
  2. While the meat is browning, crush tomatoes with your hands into the slow cooker. Add the rest of the ingredients for the sauce & meat. Stir well to combine.
  3. Cook on low 6-8 hours.
