~ tasty orzo chili soup ~

This soup came to pass from cleaning out my pantry and freezer. Was quite a hit with my family. The use of ground pork instead of beef and pasta was a refreshing change. Mighty tasty soup!

Ingredients

  • 1 1/2 teaspoons olive oil
  • 1 pound ground pork
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 stalk celery, chopped small
  • 1 medium red bell pepper, chopped
  • 1 - 14 ounces can, chopped tomatoesd with garlic, oregano and basil - juice too
  • 3 tablespoons tomato paste
  • 1/4 cup uncooked orzo pasta - or another small pasta
  • 2 cups beef broth
  • 1 - 14 ounces kidney beans, rinsed or favorite bean
  • 1/2 teaspoon beef bouillon paste
  • 1/4 teaspoon cumin or to taste
  • 1 1/2 teaspoons chili powder or to taste
  • salt - & pepper to taste
  • 1/2 teaspoon oregano
  • sour - cream, green onion and corn chips to garnish

How To Make ~ tasty orzo chili soup ~

  • Step 1
    In a dutch oven over medium heat, brown pork in olive oil until no longer pink. Salt & pepper. Break apart as it cooks.
  • Step 2
    Once pork is cooked, add onion, red pepper, celery and garlic. Cook and stir until onion is tender.
  • Step 3
    Stir in tomatoes, paste, seasonings and beef broth. Bring to a boil, then cover and simmer for 35 minutes, stirring occasionally. Add the pasta and cook another 5 minutes or until tender.
  • Step 4
    Serve with a dollop of sour cream, onion and corn chips.
