This is a good cold weather soup. It does freeze well and it is easy to double or triple the recipe. I am not even sure where this recipe came from and I know there are many versions of it around.

  • 1 lb
  • 1 medium
    onion diced
  • 1 c
  • 1 pkg
    taco seasoning mix
  • 1 can(s)
    cut up or diced tomatoes
  • 1 can(s)
    kidney beans, drained and rinsed
  • 1 can(s)
    corn, drained---or can use frozen
  • 1 can(s)
    4 oz diced green chili

How to Make Taco Soup


  1. Brown hamburger and onion in a large pot until cooked. Drain fat. Add taco seasoning and stir well. Add water.
  2. Add the tomatoes with the liquid, kidney beans, corn, and green chili.
  3. Simmer for 1 hour stirring ever so often.
    If it gets to thick you can add more water.
