This is a good cold weather soup. It does freeze well and it is easy to double or triple the recipe. I am not even sure where this recipe came from and I know there are many versions of it around.

Ingredients

  • 1 pound hamburger
  • 1 medium onion diced
  • 1 cup water
  • 1 package taco seasoning mix
  • 1 can cut up or diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained---or can use frozen
  • 1 can 4 oz diced green chili

How To Make taco soup

  • Step 1
    Brown hamburger and onion in a large pot until cooked. Drain fat. Add taco seasoning and stir well. Add water.
  • Step 2
    Add the tomatoes with the liquid, kidney beans, corn, and green chili.
  • Step 3
    Simmer for 1 hour stirring ever so often. If it gets to thick you can add more water.
