One of our family's favorite for our Sunday Family Nights.

Ingredients

  • SOUP:
  • 3 - lbs. ground hamburger, lean
  • 4 cloves garlic
  • 1/4 cup parsley flakes
  • - salt and pepper, to taste
  • 3 large cans goya cannellini beans
  • 2 large cans (26.5 oz) bush's black beans
  • 2 cans (10 oz) ro-tel, mild diced tomatoes and green chillies
  • 3 cans (28 oz) diced tomatoes w/green peppers and onions
  • 1 can (28 oz) tomato puree
  • 3 cans del monte fiesta corn
  • - red pepper flakes, to taste
  • TOPPINGS:
  • - flour tortillas, cut into strips
  • - shredded cheddar cheese
  • - sour cream, fat-free

How To Make taco soup

  • Step 1
    Brown hamburger and garlic. Season with salt, pepper, and parsley flakes. Add remaining ingredients. Simmer for 1 hour.
  • Step 2
    Top with tortilla strips, shredded cheddar cheese, and sour cream before serving.
