This is so meaty. I love the big chunks of tender beef along with the ground meat.

Ingredients

  • 2 pounds chuck roast, cut into 2-inch cubes
  • 1 pound ground beef
  • 1 pound ground pork
  • 3 tablespoons olive oil, divided
  • 1 medium onion, chopped
  • 1 medium red onion, chopped
  • 6 cloves garlic, minced
  • 1 cup dry red wine
  • salt
  • 6 Roma tomatoes, seeded and chopped
  • 3 cans red kidney beans
  • 1 cup tomato sauce
  • 6 tablespoons Ancho chili powder
  • 1/4 cup brown sugar
  • 1/4 cup pomegranate molasses
  • 4 cups water
  • shredded cheddar cheese, for serving
  • sour cream, for serving

How To Make slow cooker triple meat chili

  • Step 1
    Add 1 Tbsp olive oil to a Dutch oven. Add the chuck roast pieces and season with salt. Brown the roast pieces and add them to the slow cooker.
  • Step 2
    Brown the ground beef and ground pork in the same Dutch oven and season with salt. Add the cooked meat to the slow cooker.
  • Step 3
    Add the remaining olive oil to the Dutch oven and add the onions, and season with salt. Brown the onions and add the garlic.
  • Step 4
    Add the red wine and bring to a boil, cook 3 minutes. Add to the slow cooker.
  • Step 5
    Add the remaining ingredients to the slow cooker, except the cheese and sour cream.
  • Step 6
    Cook on low for 10 hours.
  • Step 7
    Serve topped with cheddar cheese and sour cream.
