seductive and sultry northern chili
Don't omit the cocoa; it really makes a difference and gives the chili a "mole" feel. This is not your ordinary chili; definitely something different! The flavor combinations are really complex, complimentary and like the title says, very seductive! I recommed using quality smoked sausage, like the ones found hanging at the deli. Don't forget to peel the skin if you are using one of those. A pre-packaged smoked sausage will do great, as well (like Ekrich, etc.); but don't get the sweet smoked ones (don't use the hickory or honey ones).

Ingredients
- 2 cups great northern beans
- 7 cups cold water - to soak the beans in
- 2 cups water - to add to crockpot
- 1 - link of smoked sausage (to yield 1 and 1/2 cups chopped)
- 1/2 cup diced white onion
- 2 - minced garlic cloves
- 1 - jalapeno, de-seeded and diced
- 3/4 - chopped bell pepper, chose your own color!
- 2 tablespoons brown sugar
- 4-5 cups beef stock
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon cocoa powder, unsweetened
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (this makes it spicy. use just a pinch if you want it not spicy)
- 2 tablespoons tomato base sofrito (goya)
- 1 cup half and half
- 1/2 cup cornstarch, divided
- 2 - chopped scallions and shredded cheese for garnish (i like crumbled chihuahua cheese)
How To Make seductive and sultry northern chili

Step 1Rinse and sort beans. Soak beans overnight in 7 cups of cold water. If you are using a smoked sausage that is not fully cooked, boil it now until cooked, drain and set aside in the fridge until the beans are ready the next day.

Step 2Drain beans and rinse. Place them in crockpot and cover them with all the broth and 2 cups water. Cook on medium for 2 hours.

Step 3Meanwhile, chop up your veggies and set aside.

Step 4After 2 hours, place sofrito and brown sugar in a bowl and add a ladle of hot liquid from crockpot. Mix it up and return to crockpot. Add all the rest of the ingredients to the crockpot, except for the sausage. Mix well. Cover and let cook on medium for 4 hours.

Step 5Pour 1/4 cup cornstarch in bowl. Add a few ladles of hot chili liquid. Whisk until creamy. Return to bowl. Repeat with the rest of the cornstarch.

Step 6Add the half n half. Mix, cover and leave it be for about 45 minutes or until your beans are tender and ready.

Step 7Cut sausage into rounds, and then cut those rounds into quarters. Add to the crockpot. Stir well, cover and cook for another 30 minutes.

Step 8Turn off and let the chili sit and rest for about 10 - 15 minutes before serving. Garnish with chopped scallions and shredded cheese (I liked crumbled chihuahua cheese).
