After watching a lot of cooking shows, Randy decided to try his hand at his own chili recipe, and here it is. He loves it, but it's too hot for me - he does not remove the seeds from the peppers. Chili freezes well, and he loves to freeze individual servings for later.

Ingredients

hot chili beans
2 can(s)
diced tomatoes with chilis

chopped green pepper

chopped red pepper

chopped jalepeno pepper

chopped onion
1/4 c
chili powder
2 c
tomato juice
water, as needed
cracker meal or bread crumbs to thicken

How to Make Randy's Vegetarian Chili

Step-by-Step

  • 1Chop vegetables to desired chunkiness.
  • 2Combine all ingredients (except for cracker meal) in crock pot.
  • 3Cook all day on low heat. (If chili is still too watery, add cracker meal to thicken.)
