After watching a lot of cooking shows, Randy decided to try his hand at his own chili recipe, and here it is. He loves it, but it's too hot for me - he does not remove the seeds from the peppers. Chili freezes well, and he loves to freeze individual servings for later.

Ingredients

  • 2 can(s)
    hot chili beans
  • 2 can(s)
    diced tomatoes with chilis
  • 1
    chopped green pepper
  • 1
    chopped red pepper
  • 1
    chopped jalepeno pepper
  • 1 large
    chopped onion
  • 1/4 c
    chili powder
  • 2 c
    tomato juice
  • ·
    water, as needed
  • ·
    cracker meal or bread crumbs to thicken

How to Make Randy's Vegetarian Chili

Step-by-Step

  1. Chop vegetables to desired chunkiness.
  2. Combine all ingredients (except for cracker meal) in crock pot.
  3. Cook all day on low heat. (If chili is still too watery, add cracker meal to thicken.)
