This is my favorite chili!!! If you like chili/cheese baked potatoes you'll love it. It was a recipe my grandmother use to make...when my parents were newly weds my mother fixed chili and my dad asked, "where are the potatoes?"

Ingredients

  • 1 small onion chopped
  • 2 pounds ground beef-browned and drained
  • 1 bottle 64 0z campbells tomato juice
  • 2 cans light red kidney beans-drain
  • 1 can dark red kidney beans-drain
  • 5 medium potatoes peeled and diced
  • 1 can large can of diced tomatoes (can use flavored)
  • 1 tablespoon black pepper
  • 1 teaspoon salt-to taste
  • 4-6 tablespoons chili powder (more or less)
  • 1 teaspoon crushed red pepper (more or less)

How To Make potato chili

  • Step 1
    Brown ground beef add chopped onion when 1/2 way done and drain of any grease. Drain and rinse beans.
  • Step 2
    Add all ingredients to a large stock pot bring to a low boil cook until potatoes are done(1 1/2 hrs)...stir occasionally. Thickens as potatoes cook.
  • Step 3
    Serve with a mound of cheddar cheese and a dollup of sour cream.
