potato chili
This is my favorite chili!!! If you like chili/cheese baked potatoes you'll love it. It was a recipe my grandmother use to make...when my parents were newly weds my mother fixed chili and my dad asked, "where are the potatoes?"

Ingredients
- 1 small onion chopped
- 2 pounds ground beef-browned and drained
- 1 bottle 64 0z campbells tomato juice
- 2 cans light red kidney beans-drain
- 1 can dark red kidney beans-drain
- 5 medium potatoes peeled and diced
- 1 can large can of diced tomatoes (can use flavored)
- 1 tablespoon black pepper
- 1 teaspoon salt-to taste
- 4-6 tablespoons chili powder (more or less)
- 1 teaspoon crushed red pepper (more or less)
How To Make potato chili

Step 1Brown ground beef add chopped onion when 1/2 way done and drain of any grease. Drain and rinse beans.

Step 2Add all ingredients to a large stock pot bring to a low boil cook until potatoes are done(1 1/2 hrs)...stir occasionally. Thickens as potatoes cook.

Step 3Serve with a mound of cheddar cheese and a dollup of sour cream.
