pickled oysters~cape cod appetizer
Recipe from "Flavors of Cape Cod" cookbook. Wellfleet, Cape Cod is known for oysters and my husband has a oyster grant down there on the Audubon. The picture is of my husband's biggest oyster at the Wellfleet Oyster Fest held here every year. His was the biggest and won $200 dollars for it and gave $100 to promote oyster growing in Wellfleet.

Ingredients
- 1 pint about 30 shucked fresh oysters, shelled
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 2 cloves garlic, crushed
- 6 - peppercorns
- 2 small hot green chili peppers seeded and cut in strips
- 1/2 cup mild vinegar

Step 1Add lemon juice and salt to oysters with their juice and bring to a boil. Drain oysters (reserving liquid) and fry in oil until edges curl. Remove and drain. Reduce temperature of oil and fry garlic, and peppercorns until garlic colors. Combine oyster-lemon juice, fried oysters, garlic mix and add pepper strips and vinegar. Marinate and chill overnight.
