Recipe from "Flavors of Cape Cod" cookbook.
Wellfleet, Cape Cod is known for oysters and my husband has a oyster grant down there on the Audubon.
The picture is of my husband's biggest oyster at the Wellfleet Oyster Fest held here every year. His was the biggest and won $200 dollars for it and gave $100 to promote oyster growing in Wellfleet.

    about 30 shucked fresh oysters, shelled
  • 2 tsp
    lemon juice
  • 1/2 tsp
  • 1/4 c
    olive oil
  • 2 clove
    garlic, crushed
  • 6
  • 2 small
    hot green chili peppers seeded and cut in strips
  • 1/2 c
    mild vinegar

How to Make Pickled Oysters~Cape Cod Appetizer


  1. Add lemon juice and salt to oysters with their juice and bring to a boil. Drain oysters (reserving liquid) and fry in oil until edges curl. Remove and drain. Reduce temperature of oil and fry garlic, and peppercorns until garlic colors. Combine oyster-lemon juice, fried oysters, garlic mix and add pepper strips and vinegar.
    Marinate and chill overnight.
