Pickled Oysters~Cape Cod Appetizer
Wellfleet, Cape Cod is known for oysters and my husband has a oyster grant down there on the Audubon.
The picture is of my husband's biggest oyster at the Wellfleet Oyster Fest held here every year. His was the biggest and won $200 dollars for it and gave $100 to promote oyster growing in Wellfleet.

- about 30 shucked fresh oysters, shelled
- 2 tsp
- lemon juice
- 1/2 tsp

- 2 clove
- garlic, crushed
- 2 small
- hot green chili peppers seeded and cut in strips
- 1/2 c
- mild vinegar
How to Make Pickled Oysters~Cape Cod Appetizer
- 1Add lemon juice and salt to oysters with their juice and bring to a boil. Drain oysters (reserving liquid) and fry in oil until edges curl. Remove and drain. Reduce temperature of oil and fry garlic, and peppercorns until garlic colors. Combine oyster-lemon juice, fried oysters, garlic mix and add pepper strips and vinegar.
Marinate and chill overnight.
