My sister Eloise is a few years older than I am she won a chili cook off with this recipe. I hope you enjoy it.

Ingredients

  • 2 cloves large of garlic minced
  • 2 tablespoons olive oil
  • 2 large onions chopped
  • 1 can 28 oz large can of crushed tomatoes
  • 2 pounds lean ground chuck
  • 2 cans 15 oz cans of red kidney beans drained
  • 2 tablespoons chili powder
  • 1 tablespoon paprika sweet
  • 2 teaspoons oregano, dried crushed

    Ellie's 20 Minute Chili This won a chili cookoff much to the dismay of the other entrants who cooked all day long. Tee Hee! 2T olive oil, 2 Lg. onions chopped, 2 cloves garlic minced,2 lbs. lean ground chuck, 1-28 oz can crushed tomatoes, 2-15 oz. cans kidney beans drained, 2T chili powder, 1T sweet paprIka,2t crumbled oregano, salt. Heat oil in large skillet, Saute onions and garlic till golden. Add ground chuck and cook over high heat till meat is brown and crumbly, Add tomatoes. Simmer uncovered for 10 minutes stirring occasionally. Stir In remaining ingredients. Simmer another 10 minutes. Better made the day before, I serve this with guacamole, chopped onions, grated cheese, sour cream, corn chips and salsa. That way everyone gets to fix their chili how they want. This used to be a super bowl staple at our house. Don’t be afraid to double or triple this recipe. Also if you like the 5 alarm style chili, add some adobo powder or cayenne to taste. Add a cup or so of frozen corn, ala Mrs. Sanchez.
