Ingredients

  • 2 1/2 pounds ground chuck
  • 2 cups onion, chopped
  • 1 large green pepper, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons chili powder
  • 1 1/2 teaspoons oregano, dried
  • 1 teaspoon basil, dried
  • 1 - 6 oz. cans tomato paste
  • 3 cans kidney beans, drained (i usually do 1 dark red & 2 light red)
  • 1/4 teaspoon crushed red pepper
  • 1 teaspoon cumin
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 2 - 1 lb. cans tomatoes, diced
  • 2 - 8 oz. cans tomato sauce

How To Make *** mom's chili ***

  • Step 1
    In large pot, saute beef, drain fat off. Add onion, green pepper, garlic, chili powder, oregano, basil, red pepper, cumin & mix well. Cook; stirring until onions are tender.
  • Step 2
    Stir in sugar, salt, tomatoes, tomato sauce & tomato paste, mix well. Bring to a boil, then simmer slow, covered until thickened, about 40 minutes. Stirring often.
  • Step 3
    Add beans, simmer, covered, about 10 more minutes.
  • Step 4
    When serving, top with sour cream,raw diced onion, shredded cheddar cheese.
  • Step 5
    NOTE: Can also add 1 bag frozen corn (I learned this from a firefighter), 2 C of white wine. You can also serve the chili over rice or pasta.
