Ingredients
- 2 1/2 pounds ground chuck
- 2 cups onion, chopped
- 1 large green pepper, chopped
- 2 cloves garlic, minced
- 3 tablespoons chili powder
- 1 1/2 teaspoons oregano, dried
- 1 teaspoon basil, dried
- 1 - 6 oz. cans tomato paste
- 3 cans kidney beans, drained (i usually do 1 dark red & 2 light red)
- 1/4 teaspoon crushed red pepper
- 1 teaspoon cumin
- 2 tablespoons sugar
- 2 teaspoons salt
- 2 - 1 lb. cans tomatoes, diced
- 2 - 8 oz. cans tomato sauce
How To Make *** mom's chili ***

Step 1In large pot, saute beef, drain fat off. Add onion, green pepper, garlic, chili powder, oregano, basil, red pepper, cumin & mix well. Cook; stirring until onions are tender.

Step 2Stir in sugar, salt, tomatoes, tomato sauce & tomato paste, mix well. Bring to a boil, then simmer slow, covered until thickened, about 40 minutes. Stirring often.

Step 3Add beans, simmer, covered, about 10 more minutes.

Step 4When serving, top with sour cream,raw diced onion, shredded cheddar cheese.

Step 5NOTE: Can also add 1 bag frozen corn (I learned this from a firefighter), 2 C of white wine. You can also serve the chili over rice or pasta.
