old folks chili

This is a combination of recipes that I put together tonight. The better half said it was great! Less beans, more meat!

Ingredients

  • 2 1/2 pounds ground beef (i used ground round)
  • 1 pound medium pork sausage (i used old folks)
  • 1/2 - green pepper
  • 1/2 - red pepper
  • 1/2 - yellow onion
  • 22 ounces tomato sauce (i used red gold)
  • 15 ounces kidney beans, drained & rinsed (i used red gold)
  • 15 ounces diced tomatoes (i used red gold)
  • 4 ounces tomato paste (i used hunts
  • 1 cup water
  • - ground cumin, to taste
  • - mexene chili powder, to taste
  • - salt & pepper, to taste

How To Make old folks chili

  • Step 1
    Place the ground beef, sausage, peppers and onions in a large cast iron pot over medium-high heat. Cook, stirring to crumble, until evenly browned and vegetables are soft. Drain off grease. Add back to pot, add kidney beans, diced tomatoes, sauce & paste and the cup of water. Stir for a few minutes to combine. Stir in cumin, chili powder & salt & pepper to taste. Simmer over low heat for 40 minutes uncovered.
