I love my traditional chili with lots and lots of ground beef, but I am no longer able to digest beef and I was really missing the taste of chili. So, here is what I came up with. And it's a hit in our house!

dark red kidney beans
2 can(s)
diced tomatoes
1 can(s)
white hominy, drained
1 can(s)
garbanzos, with juice
1/4 c
frozen chopped onions
1 Tbsp
hot mexican chili powder
1/2 tsp
ground black pepper


1drain about half of the liquid off of the hominy, dump the remaining ingredients in the crock pot
2adjust chili powder and black pepper to taste.
3cook for 2 to 4 hours on hi, then you can eat it or turn down to simmer to enjoy later
