meatless chili

I love my traditional chili with lots and lots of ground beef, but I am no longer able to digest beef and I was really missing the taste of chili. So, here is what I came up with. And it's a hit in our house!

Ingredients
- 3 cans dark red kidney beans
- 2 cans diced tomatoes
- 1 can white hominy, drained
- 1 can garbanzos, with juice
- 1/4 cup frozen chopped onions
- 1 tablespoon hot mexican chili powder
- 1/2 teaspoon ground black pepper
How To Make meatless chili

Step 1drain about half of the liquid off of the hominy, dump the remaining ingredients in the crock pot

Step 2adjust chili powder and black pepper to taste.

Step 3cook for 2 to 4 hours on hi, then you can eat it or turn down to simmer to enjoy later
