Great chili recipe

Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 1 - green pepper diced
  • 1 large jalapeno seeded and diced
  • 4 cloves garlic minced
  • 1 tablespoon each chili powder, cumin and smoked paprika
  • 28 ounces can crushed tomatoes
  • 2 cups beef stock
  • 2 tablespoons tomato paste
  • 15 ounces can black beans drained
  • - shredded cheddar cheese, sour cream and chopped chives for garnish

How To Make meatball chili

  • Step 1
    Roll the ground beef into small balls. Add olive oil to a large pot brown the meatballs and remove to a plate and set aside. Add the onions, jalapenos, green pepper and garlic and cook until softened.
  • Step 2
    Add the crushed tomatoes, spices, tomato paste and beef stock. Add the meatballs back to the pan. Cook about 10 minutes. Add the black beans and cook 5 more minutes.
  • Step 3
    Serve topped with cheese, sour cream and chives.
