lulu's soup
My Aunt Luann shared her chicken chili recipe with me to add to the family cookbook I've been working on. I ended up adding too much water, so it turned out more like one of my favorite soups I buy at the store. My Dad asked for the recipe and he modified the ingredients a little bit by adding Zatarain's Dirty Rice to it. Oh my goodness, it made a great soup taste that much better. Happy Soup Season! *You can use two large cans of chicken if you want to save time.

Ingredients
- 4 cans great northern beans
- 2 cans corn
- 1 can rotel
- 1 box zatarain's dirty rice; prepared
- 4 - chicken breasts; cooked and shredded*
- 16 ounces container sour cream
- 3 1/2 cans water
- 1 package white chili seasoning
How To Make lulu's soup

Step 1Prepare rice as directed on box. Set aside.

Step 2In a large pot, combine water, chicken, beans, seasoning, corn, and Rotel. Bring to a boil and then turn heat to low. Let simmer for 20 to 45 minutes.

Step 3Stir in prepared rice and sour cream until blended. Serve with shredded cheese, cilantro, tortilla chips, and diced avocado if you prefer.
