My Aunt Luann shared her chicken chili recipe with me to add to the family cookbook I've been working on. I ended up adding too much water, so it turned out more like one of my favorite soups I buy at the store. My Dad asked for the recipe and he modified the ingredients a little bit by adding Zatarain's Dirty Rice to it. Oh my goodness, it made a great soup taste that much better. Happy Soup Season!

*You can use two large cans of chicken if you want to save time.

container sour cream

white chili seasoning

How to Make Lulu's Soup


  • 1Prepare rice as directed on box. Set aside.
  • 2In a large pot, combine water, chicken, beans, seasoning, corn, and Rotel. Bring to a boil and then turn heat to low. Let simmer for 20 to 45 minutes.
  • 3Stir in prepared rice and sour cream until blended.

    Serve with shredded cheese, cilantro, tortilla chips, and diced avocado if you prefer.
