lolly's white chicken chili
This soup was a favorite at an out of business restaurant. My family thought it tasted even better....

Ingredients
- 4 - skinless boneless chicken breast
- 1-2 medium white potatoes, peeled & chopped
- 1-2 medium yellow onions, chopped
- 4 stalks celery, chopped
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 2 cans chicken broth or chicken base & water to equal
- 2 cans navy beans drained & rinsed
- 1 can navy beans drained, rinsed & pureed
- 1-2 can 4.5 chopped green chilies, undrained
- 1 teaspoon ground cumin
- 3/4 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground black pepper
- 1/8 teaspoon ground red pepper (cayenne)
- - red pepper flakes to taste
- - sour cream, chopped fresh cilantro or chopped green onions (scallions)
- DIRECTIONS
- COOK CHICKEN OR USE DELI COOKED CHICKEN. SHRED OR CHOP INTO BITE SIZE PIECES.
How To Make lolly's white chicken chili

Step 1Shred or Chop cooked Chicken into bite size pieces. Set aside.

Step 2Saute' Onion, Celery, Potato & Garlic in oil, add Chicken.

Step 3Stir in broth & rest of ingredients; bring to boil. Reduce heat and simmer uncovered 30 minutes. Stir occasionally. Serve with desired toppings. Makes approx. 15 cups.

Step 4Enjoy... with topping of Sour Cream, chopped fresh Cilantro or chopped Green Onions and Fresh Cuban Bread or French Loaf or French Bread.... Salud and Happy Days... Lolly
