This chili is so nice to come home to after a long day at work. Note :You can have what ever amount or type of beans you like or you don't have to have beans in this if you don't want too.

Ingredients

  •   2 lb
    ground beef
  •   1 lb
    ground pork
  •   1/2 Tbsp
    bacon fat or 5 precooked strips bacon crushed
  •   1 c
    chopped celery
  •   1/2 c
    green and red peppers, chopped
  •   1 c
    chopped onion
  •   1/4 c
    sugar
  •   1/4 c
    dark brown sugar
  •   1 Tbsp
    beef soup base
  •   48 oz
    vegetable juice (v-8)
  •   1 tsp
    thyme
  •   2 tsp
    salt
  •   1 tsp
    pepper sauce or to taste
  •   1 tsp
    cumin seed
  •   1 tsp
    garlic powder or minced garlic
  •   2
    bay leaves
  •   1 tsp
    cilantro
  •   1/2 Tbsp
    mexican oregano
  •   1 pkg
    chili seasoning
  •   1 Tbsp
    paprika
  •   1 can(s)
    stewed tomatoes, 16 ounces
  •   2 can(s)
    pinto beans
  •   1 can(s)
    light red kidney beans

How To Make

  • 1
    Brown pork and beef, and drain very well.
  • 2
    Add all ingredients to large crock pot and cover.
  • 3
    Cook on high for 4-6 hours or low for 8-12 hours.

    The longer it cooks, the thicker it gets.
  • 5
    Cubed roast or steak may be substitiuted for the ground meat.
