I have grown up making this dish and don't really use a recipe. This is the best I could come up with but you are invited to adjust seasonings to your taste.

1 lb
meat - gound beef, turkey or pork or stew meat
3-4 medium
potatoes, peeled and cubed
1/2 medium
onion, quartered and sliced
1 clove
garlic, finely minced
1/2 c
cilantro, chopped
1 c
fresh/frozen green chili, roasted, peeled and chopped
1/2 c
5-6 c
bouillon cube
1-1/2 tsp
creole or cajun seasoning
1-1/2 tsp
garlic salt

How to Make Green Chili Stew


  • 1Brown meat over med high heat until well caramelized.
  • 2Add garlic and onion. Cook until onion is translucent.
  • 3Add flour and seasonings and cook well.
  • 4Add potatoes, green chili, cilantro, water and bouillon.
  • 5Reduce heat to low and simmer until potatoes are tender.
