green chili stew

I have grown up making this dish and don't really use a recipe. This is the best I could come up with but you are invited to adjust seasonings to your taste.

Ingredients

  • 1 pound meat - gound beef, turkey or pork or stew meat
  • 3-4 medium potatoes, peeled and cubed
  • 1/2 medium onion, quartered and sliced
  • 1 clove garlic, finely minced
  • 1/2 cup cilantro, chopped
  • 1 cup fresh/frozen green chili, roasted, peeled and chopped
  • 1/2 cup flour
  • 5-6 cups water
  • 1 - bouillon cube
  • 1-1/2 teaspoon creole or cajun seasoning
  • 1-1/2 teaspoon garlic salt

How To Make green chili stew

  • Step 1
    Brown meat over med high heat until well caramelized.
  • Step 2
    Add garlic and onion. Cook until onion is translucent.
  • Step 3
    Add flour and seasonings and cook well.
  • Step 4
    Add potatoes, green chili, cilantro, water and bouillon.
  • Step 5
    Reduce heat to low and simmer until potatoes are tender.
