green chili stew

This is my mom recipe and it has been handed down to me...this is great for those cold cold nights..It is a great source of vitamin c....You can make it as spicy as you like by the kind of green chili you put in it.....

Ingredients

  • 3 packages green chiles (frozen) or (large cans)
  • 2 cloves garlic (minced)
  • 2 medium onion (chopped)
  • 1 1/2 pounds meat (ground sirloin, pork, or chicken)
  • 1 quart tomatoes
  • 5 - bouillon cubes (depends on the meat)
  • 2 medium zucchini (sliced with peel) or crookneck
  • 2 medium potatoes (cubed)
  • 1 teaspoon oregano, dried
  • - salt (to taste)
  • 2 tablespoons cooking oil
  • - water

How To Make green chili stew

  • Step 1
    BOUILLON CUBES ( IF YOU ARE USING PORK THEN USE VEGETABLE BROTH)
  • Step 2
    In a Dutch Oven: Cut up pork roast into chunks, brown pork in 2 Tbsp of cooking oil. Add garlic, and onion, sauté with pork, and spices.
  • Step 3
    Add tomatoes, potatoes, green chili, zucchini, bouillon, cubes, add water as needed to one inch from the top on Dutch Oven. Salt to taste.....cook on medium for 1 1/2 hour stirring often...serve hot...
