green chili stew
This is my mom recipe and it has been handed down to me...this is great for those cold cold nights..It is a great source of vitamin c....You can make it as spicy as you like by the kind of green chili you put in it.....

Ingredients
- 3 packages green chiles (frozen) or (large cans)
- 2 cloves garlic (minced)
- 2 medium onion (chopped)
- 1 1/2 pounds meat (ground sirloin, pork, or chicken)
- 1 quart tomatoes
- 5 - bouillon cubes (depends on the meat)
- 2 medium zucchini (sliced with peel) or crookneck
- 2 medium potatoes (cubed)
- 1 teaspoon oregano, dried
- - salt (to taste)
- 2 tablespoons cooking oil
- - water
How To Make green chili stew

Step 1BOUILLON CUBES ( IF YOU ARE USING PORK THEN USE VEGETABLE BROTH)

Step 2In a Dutch Oven: Cut up pork roast into chunks, brown pork in 2 Tbsp of cooking oil. Add garlic, and onion, sauté with pork, and spices.

Step 3Add tomatoes, potatoes, green chili, zucchini, bouillon, cubes, add water as needed to one inch from the top on Dutch Oven. Salt to taste.....cook on medium for 1 1/2 hour stirring often...serve hot...
