This is absolutely perfect for cold season as Green Chili is high in Vitamin C. Fresh or frozen/ raw or roasted green chili can be used. It comes in mild, medium and hot. I prefer medium or hot for this recipe. This is for a fairly large recipe

Ingredients
- 2-3 lg cans chicken broth
- 2-3 cups minute rice instant
- 1 lg bag - sliced carrots
- 3-4 large celery stalks chopped
- 2-3 pounds chicken-cooked and shreaded
- several - chopped green chilis-to taste and season depending on how spicy you like it
How To Make green chili chicken and rice

Step 1Cook chicken and shred.

Step 2In large stew pot, pour in chicken broth, chicken, carrots celery and green chili.

Step 3Simmer until carrots and celery are tender then add chicken and rice.

Step 4Simmer until rice is ready. The rice should NOT absorb all the broth. This is a soup. If need be, add more broth.
