five bean chili

My dad taught me how to make chili, and it wasn't until a friends of mine requested the recipie that i wrote it down. It had a Puerto Rican twist, using the spices my grandmother taught me about.

Ingredients

  • 2 tablespoons olive oil, extra virgin
  • 2 pounds ground beef
  • 1 - onions, yellow, medium
  • 2 cloves garlic
  • 1 can pinto beans
  • 1 can great northern beans
  • 1 can kidney beans, canned
  • 1 can black beans, canned
  • 2 cans chili beans
  • 14 ounces tomato sauce
  • 27 ounces tomatoes, canned and chopped, with liquid
  • pinch salt and pepper
  • pinch seasoned salt
  • pinch oregano, dried
  • pinch chili powder
  • 2 packages achiote seasoning
  • 1 package corn bread mix

How To Make five bean chili

  • Step 1
    First off, put a little olive oil in a skillet and when it’s hot, sauté onion and garlic. Then add the ground beef and brown. While it’s browning add some salt pepper and seasoned salt. After it’s finished dump it in the Crockpot, grease and all.
  • Step 2
    Next you add all the cans of beans. I like to put a little water in the bottom of the can after I’ve dumped out the beans and rinse it around, then add that too. Add all the remaining ingredients, seasoning to taste. I’m VERY liberal with my seasonings, but remember you can always add more, you can’t take away.
  • Step 3
    By this time you should have enough liquid, but if you feel like you need more, go ahead and add some more water. I leave it in the Crockpot on high half the day, and then turn it down to low.
  • Step 4
    About halfway through I check the seasonings and see if anything else should be added, after everything has had a chance to blend together. And that’s it!
