Chili has always been a comfort food in my family. This is my daughter's version. It is always served with corn bread muffins!

Ingredients For erica's chili

  • 1 lb
    lean ground beef
  • 1 c
    chopped onion (1 medium onion)
  • 1 can
    black beans or chili beans
  • 1 can
    corn (kernels, or creamed)
  • 1 can
    tomato sauce (8 oz)
  • 2
    chipotle peppers from a can of chipotle in adobe (freeze the leftovers)
  • 1 Tbsp
    ground chili peppers, medium heat (or use commercial chili powder)
  • 1 tsp
    garlic powder or granules
  • salt, to taste
  • shredded cheese, sour cream, avocado, cilantro - add as desired to serve

How To Make erica's chili

  • 1
    In a chili pot, brown ground beef and onions until meat is no longer pink.
  • 2
    Add beans, corn, chipotle peppers, tomato sauce and seasonings.

    Simmer together for about 1/2 hour. Add some water if it seems too thick. Taste for salt and adjust, if necessary.

    Set out toppings and people can add what they like.
