Chili has always been a comfort food in my family. This is my daughter's version. It is always served with corn bread muffins!

Ingredients
- 1 pound lean ground beef
- 1 cup chopped onion (1 medium onion)
- 1 can black beans or chili beans
- 1 can corn (kernels, or creamed)
- 1 can tomato sauce (8 oz)
- 2 chipotle peppers from a can of chipotle in adobe (freeze the leftovers)
- 1 tablespoon ground chili peppers, medium heat (or use commercial chili powder)
- 1 teaspoon garlic powder or granules
- salt, to taste
- shredded cheese, sour cream, avocado, cilantro - add as desired to serve
How To Make erica's chili

Step 1In a chili pot, brown ground beef and onions until meat is no longer pink.

Step 2Add beans, corn, chipotle peppers, tomato sauce and seasonings.

Step 3Simmer together for about 1/2 hour. Add some water if it seems too thick. Taste for salt and adjust, if necessary.

Step 4Set out toppings and people can add what they like.
