easy white chicken chili

Super easy and delicious chili! Perfect on rainy days or cold ones. This is something my grandmother threw together and it has been in the family for years. Very delicious with cornbread!

Ingredients

  • 4 cups chicken broth
  • 4 - 15 oz cans of pinto beans or great northern beans
  • 2 cups shredded chicken
  • 2 - 4 oz cans of diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese

How To Make easy white chicken chili

  • Step 1
    Place chicken in a large pot ( about 1 pound ) and heat to a boil. Reduce heat to a medium and continue boiling for 45 minutes or until chicken is cooked through. Shred chicken.
  • Step 2
    Clean out the same pot. Add shredded chicken, broth, green chilies, cumin, garlic powder, oregano and pepper. Simmer on low/medium heat for 30 minutes.
  • Step 3
    Right before serving stir in sour cream and cheese until well blended.
