With the temperature 35 F below normal, today's high was 52 F and the rains, well it's been raining for 3 days straight. So chili sounded good today, and hopefully gets the chills out of my bones! And the best part, I cook my chili in the slow cooker. Great thing is that your slow cooker will do most of the work for you. There’s nothing like your crockpot simmering away, while you’re at the office working… hours later, you come home to a dinner already cooked!

Ingredients

  • 2 28 oz. cans hunts whole peeled plum tomatoes
  • 2 16 oz. cans bush's dark red kidney beans
  • 1 8 oz. cans hunts tomato sauce
  • 1 6 oz. cans tomato paste
  • 1 large spanish onion
  • 2-3 medium green peppers
  • 4 stalks celery
  • 4 cloves garlic
  • 2 1/2- 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 tablespoon oregano, dried
  • 2 teaspoons basil, dried
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 2-3 - bay leaves, dried
  • 2 1/2- 3 pounds ground beef

How To Make chili recipe in crockpot

  • Step 1
    In a large mixing bowl, add plum tomatoes, breaking the tomatoes apart, discarding any remaining peels.
  • Step 2
    To the tomatoes in the mixing bowl, add tomato sauce and tomato paste; mixing well to combine.
  • Step 3
    Drain and rinse the kidney beans; add to the tomato mixture.
  • Step 4
    On a cutting board, finely dice the garlic. Adding to tomato mixture.
  • Step 5
    On the cutting board, dice the celery into semi small pieces. Adding to tomato mixture.
  • Step 6
    On the cutting board, dice the onion into semi small pieces. Adding to tomato mixture.
  • Step 7
    On the cutting board, dice the onion into semi small pieces. Adding to tomato mixture.
  • Step 8
    Add the salt and pepper with the remaining spices, mixing in well. Cover with saran wrap and place in the refrigerator while you cook the ground beef.
  • Step 9
    In a medium fry pan, fry the ground beef over med/low heat; cooking until meat is cooked through.
  • Step 10
    Once the ground beef is cooked, drain and add to the crockpot.
  • Step 11
    Add the tomato mixture to the crockpot; mixing all ingredients together.
  • Step 12
    Set the Crock-Pot timer set the cooking time to your person preference to cook: * Cook low heat 8-10 hrs. * Cook high heat 4-6 hours.

    After 4 hours of cooking I usually take a taste to see if seasonings need adjusted, and usually end adding more chili pepper...
