Ingredients
- 1 1/2 pounds chicken breasts, boneless and skinless
- 1 medium yellow onion... chopped
- 1 medium green bell pepper... chopped
- 1 pound bag frozen whole kernel corn
- 2 quarts fresh frozen tomatoes
- 6 ounces tomato paste[1 can]
- 1 can tomato soup
- 1 can water[use the tomato paste can]
- 2 cans dark kidney beans
- - use... to taste... hot chili powder,red pepper flakes,hot salt,smokey paprika,cayanne pepper,fresh black pepper
- 2 packages 8 oz fat free cream cheese

Step 1spray lg fry pan with non stick spray... add chopped onions and bell pepper.. while they cook cut chicken into bite size pieces... add to fry pan cook til no longer pink... remove from heat and let cool as u work on other

Step 2spray a 6 qt crock pot with non stick spray... add tomatoes,tomato paste, soup corn,beans an spices... taste[do ya need more spices]..

Step 3add chicken /veggies to crock stir well put in fridge several hours and/or overnight.. next morning turn crock pot on low and cook 4-5 hrs... add cream cheese stir to melt cook bout 1 hour more

Step 4serve with some dried green onions on top... and enjoy [i love this chili with a grilled cheese sandwich]
