Ingredients

  • 1/2 cup onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil, extra virgin
  • 19 ounces black bean soup
  • 14 1/2 ounces fire roasted tomatoes, canned
  • 8 3/4 ounces corn, canned
  • 1/4 cup salsa
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup green onions, sliced
  • - sour cream

How To Make black bean chili chowder

  • Step 1
    In a large saucepan, saute onions in olive oil for a couple of minutes, add garlic and saute another couple of minutes.
  • Step 2
    Add soup, tomatoes, corn, 1/2 of the green onions, red pepper flakes and salsa; bring to boil.
  • Step 3
    Reduce heat to medium; cook 3 minutes.
  • Step 4
    Serve with a dollop of sour cream and reserved green onions.
