black bean and pumpkin chili -slow cooker

My mothe-in-law gave me this recipe and it is fantastic! I think she found it in a Taste of Home Magazine. With fall right around the corner I'm looking forward to making it again!

Ingredients

  • 1 medium chopped onion
  • 1 medium chopped yellow pepper
  • 3 cloves minced garlic
  • 2 tablespoons olive oil
  • 3 cups chicken broth
  • 2 cans 15 oz black beans
  • 2 1/2 cups cubed cooked turkey
  • 1 can 15 oz solid packed pumpkin
  • 1 can 14 1/2 oz diced tomatoes drained
  • 2 teaspoons dried parsley flakes
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt

How To Make black bean and pumpkin chili -slow cooker

  • Step 1
    In a large skillet saute onion, yellow pepper and garlic in oil until tender, transfer to slow cooker, stir in remailing ingredients.
  • Step 2
    Cover and cook on low 4 to 5 hours until heated through
