My goodness this is good stuff! My sister introduced this to me & my family is crazy about this soup. It's a good New Year's Eve dish for all the drop-in guests, too. This is one of the dishes I make for our family night, especially on cold and rainy nights. My granddaughter calls it Taco Chili.

Ingredients

  • 1 pound ground beef, browned & drained
  • 1 medium onion, chopped
  • 1 package dry ranch dressing seasoning mix
  • 1 package taco seasoning mix
  • 1 medium can shoe-peg corn (or any corn)*
  • 1 medium can red kidney beans
  • 1 medium can black beans, drain & rinse
  • 1 can ro-tel tomatoes (hot or mild)
  • 1 large can stewed tomatoes

How To Make bea's taco soup

  • Step 1
    Brown ground beef & onions & drain. Mix the dry Hidden Valley Ranch Dressing Seasoning Mix & Taco Seasoning Mix with meat. Add all other ingredients.
  • Step 2
    At this point you can transfer to a crockpot and cook on high for a couple of hours or so or on low for several hours. OR...you can leave on stove top, bring to a boil then cook on medium-low for a couple of hours.
  • Step 3
    TOPPINGS: serve with shredded cheese, sour cream, black olives, Tostitos, nacho chips or Fritos on top.
  • Step 4
    *Sometimes I use creamed corn and this works very well. I have also used frozen corn but I do add about 1/2 cup water. Also, I use my own frozen tomatoes (when I have them). This is a recipe you can play around with.
