basic chili

This is just my basic chili. It's quick and easy. We like spicy food at my house so sometimes we add jalapenos, sometimes we add hot sauce, sometimes we add my Mama's dried red peppers from the garden. Sometimes we add mushrooms or leave out the macaroni. It's a good easy basic recipe to work from.

Ingredients

  • 2 pounds hamburger
  • 2 cans dark kidney beans, drained & rinsed
  • 1 large can tomato juice
  • 2 cans tomatoes, diced with juice
  • 1 can green chilis, diced with juice
  • 1 medium green pepper, diced
  • 1 large onion, diced
  • 2 tablespoons brown sugar
  • 1 teaspoon red pepper flakes
  • 1 package chili powder seasoning mix (i like save-a-lots)
  • 2 teaspoons cumin
  • 1 cup dry elbow macaroni (or other short-cut pasta)
  • - salt & black pepper to taste

How To Make basic chili

  • Step 1
    Brown hamburger with onions, bell pepper, red pepper flakes & black pepper. Drain.
  • Step 2
    Add meat & all other ingredients back to pot (except pasta). Stir to combine, turn on low & cover.
  • Step 3
    Simmer for at least 1 hour stirring often (using a non stick pot is best).
  • Step 4
    Cook macaroni (or other short-cut pasta) according to directions. * I usally don't add my pasta till the very end of the cooking process so it doesn't get over cooked.
  • Step 5
    Serve with shredded cheddar, sour cream, crackers, or whatever you like.
